Pomelo, Oroblanco, Kumquat
1 oz Buffalo Trace
1 oz Averna
1.25 oz House Sour Mix – Equal parts pomelo juice, oroblanco juice and honey, 1/2 part Kumquat juice.

Shaken Double Strained neat 

Garnished with kumquat cut length wise, laid open and sprinkled with raw sugar.   Caramelize the sugar.   Place sage leaf in middle of kumquat and reassemble.
